Houston's top chefs seek sweet victory on 'Just Desserts'
: "It's hard to narrow it down. I had some delicious desserts in Paris while I was in school and working at my internship. And while in New York, the desserts were endlessly good. But lately, the one that sticks with me is Philip Speer's (Uchi/Uchiko) Corn Dessert. There was corn custard, corn sorbet, popcorn salt and a lemon gel. All together it is the perfect bite for me."pastry triumph/ flub: "I think my greatest pastry triumph is what I do every day. I was laid off from my job in January 2010 ... and I haven't had to move home yet! I created a job for myself, created my own business and (fingers crossed) will continue creating sweets. My greatest flub could also be categorized as my most embarrassing moment. I was doing my stage (internship) in Paris at Le Hotel Bristol . The restaurant had just received their second Michelin star and the entire kitchen was being taken outside for a group photograph of the brigade. As a stagi are, I was included, so out I went. I was standing there and all of a sudden realized that I had left a caramel on the stove.... cooking. I took off running to the kitchen. By the time I got downstairs, the kitchen was filled with black smoke and the dishwashers were trying to figure out what was burning. I took the caramel off the stove and ran back upstairs to return to the photograph. There were 35-40 cooks and chefs laughing hysterically at me. I didn't live that moment down the remainder of the time I was there. I was referred to as the American girl who burns caramel."
"Pie! I want pie to be the new cupcake."
What I'd do with $100,000 if I won TCJD: "Buy shoes. No, really, it would be a kick-start to my dream of making Fluff Bake Bar an actual location. I want to open a retail spot. I love what my desserts are doing at Revival Market and I will continue to sell my products there, but I really want to open a Fluff Bake Bar."
"I think TCJD really brought out some of that inspiration and passion that sometimes gets lost in the day-to-day work life. Sometimes, as we move down our career paths, we find it hard to get inspired, especially with the repetition that is a part of the job, but after working next to some of the best pastry chefs in the nation, I was inspired to make new desserts and go outside my comfort level to bring new items to Revival Market.
